i think it is bcoz most of the night blooming plants are pollinated by nocturnal animals and they donot need to be lured by the color of flowers. instead certain smell is imparted by the flowers which attratcs these animals.

bcoz the pollination in these flowers can occur only at night so to attract the pollinators like bats, moths & other insects they are of white colour so maximum moon light can be reflected to make flowers attractive to promote pollination
