Zymase and invertase. Invertase converts sucrose to glucose and fructose which are then converted to ethyl alcohol and CO2 by Zymase enzyme.

hey.. i also agree with bhaskarrya....yeast secretes both these enzymes.. viz. zymase and invertase..it even produces maltase to convert maltose to glucose units, and also some kinds of hexophosphates... actually, all are correct..

sucrase and invertase are the same, it also produces amylase.....

its mainly amylase( named as diastase)

sti is right i read in some book that yeast cells secretea group of enzymes which r collectively known as ZYMASE it has been asked in many competetive xams

all these above mentioned enzymes are collectively called ZYMASE COMPLEX.
