The iit's always follow recent trends in industry and make the syllabus changes accordingly.
Now since material science is booming,iitb has introduced lots of mat.sci in their curriculum.

you can see for yourself how less metallurgy courses there are!
But if you want to work in mat.sci. then you'll have to go for an MS because the mat.sci. course contents in any undergrad program is a bit too basic.
If you want to go for an mba,then this is the best branch you can be in.
I have talked to many seniors from iitb,they say that it is the most relaxed branch there.
It will give you plenty of time to prepare for CAT,you will enjoy you time at iitb.

You can get great placements in materials science itself.
Most companies today,e.g the automobile industry,etc. are in need of a mateials engineer.
But if you are looking for placements as a materials engineer,then you'll have to do a post.grad in the subject.A B.tech is not enough.
You could go for an MS degree abroad.Metallurgy is an easy course at iitb,and it is easy to get the required gpa for foreign admission.
Alternatively,if you are looking forward to an mba,then this is the best option you have,as again it will allow you to prepare for CAT as well.
meta students are generally picked up by automobile{Hero,Tata,TVS,Ashok Leyland,etc}, oil{NTPC,Schlum,Shell,etc},steel{Tata,Sail,etc} & heavy electricals{BHEL,Caterpillar,etc} companies.
Noncore companies{finance,consultancy,IT,analytics} recruit from all branches.
The avg salary for meta @IIT M & IIT R was 7+ in 2007-08.{I dont have the figures for IIT B}
