Given the pattern of JEE nowadays, its of utmost importance that you complete the syllabus if you want to get through. In an objective paper, you have to score the maximum and that you can't do if you don't know the entire syllabus. So your first aim should be covering the entire syllabus, that is being reasonably proficient in all the things. After that you can start working on areas you find easy and work harder for those you find hard. But syllabus coverage is the most important priority
About how to study ... well, just study ... take track of all the time you waste, and convert it to study time.

if u really want to crack JEE, dont just focus on one topic...or subject....have proper command in all the 3 subjects......try nd study everything......coz more u study, more becomes ur probability in answering the paper....
well u hv asked abt chemistry....all i wud say is make ur Physical part strong....nd learn Organic reactions wid proper mechanism....nd Inorganic just refer NCERT....no need to go much deeper....
in Maths....Calculus is very important....hv a thorough knowledge of graphs of various functions....Trigo, Algebra nd Co-ordinate are also important....i mean all topics r imp....lol
In Physics....make ur Mechanics strong, Optics, Electricity, Emi....all these r important....also dont forget to study Modern Physics...its also important....
So after my list of Important topics, jus let me tell u....keep ur study dynamic....i mean keep revising what all u hv learnt.....otherwise u'll move further nd forget what all u studied earlier....so hv dynamic study....i think dats enuff of my advice...:P

For IIT JEE each and everything must be done in depth and thoroughly. Anything can come, from anywhere, in any fashion.
Eg:
In physics you must be good with mechanics, current/electrostatics/magnetism etc, optics, modern physics all this pretty much covers the entire syllabus.
Look for past years papers for weightagees given to various topics.

To divide a cube into two other cubes, a fourth power or in general any power whatever into two powers of the same denomination above the second is impossible, and I have assuredly found an admirable proof of this, but the margin is too narrow to contain it.~~~Pierre de Fermat (1601-1665)~~~

If you're talking about expertise, then here are a few points:
1] The pattern is such now-a-adays that the questions mostly cover 2-3 topics.
2] No matter how hard you study a particular topic, it's never possible to be sure of cracking any qn in it. So rather in specializing, cover all the topics. Specialization wont help you, it will drown you. Take for eg this qn:
Basically, its an SHM qn. And suppose you have specialization in SHM.
Q - A body of mass m is suspended on a spring of constant k and is oscillating with an amplitude x. Find the phase of the body when the spring is cut so that the body reaches a maximum absolute height.
This question combined Newton's law, SHM, calculus and kinematics on a single dimension. You can write the SHM equation and stuff, but unless you have studied all topics well, you won't be able to write a general expression for height when the body has any phase and then maximise it using calculus. So you see my point? Cover all topics. Be equally strong in all of them. But actually, there are some topics which, I personally feel, are not that important. They are :
Inorganic Chem - Qualitative analysis and Group Chemistry. I finished this chapter, but didn't do it that well.
Thats it! All other topics are important.

AS FAR AS PHYSICS IS CONCERNED IN MY VIEWS THE PRIORITY LIST COULD BE- 1. MODERN PHYSICS 2. MAGNETIC EFFECT OF CURRENT 3. FLUIDS 4. DYANAMICS 5. CURRENT ELECCTRICITY
THESE ARE THE TOPICS WHICH IF U MASTER CAN MAKE U DO THE PHYSICS PORTION WELL TO GET SELECTED. BUT FOR GOOD RANK COMPLETE COVERAGE OF THE SYLLABUS IS A MUST.
