The third substance is called emulsifier or emulsifying agent. Commonly the emulsifiers are long chain compounds with polar groups such as soaps, sulphonic acids, alkyl sulphates. Most of the lyophilic colloids also act as emulsifiers ,eg, starcg, glue etc.
