So that heat can be supplied to egg uniformly. If you but an egg in a pan without water the side which is on the pan will become excessivly hot while the side which is away from pan surface will remain cold.

egg contain solid layer around it. so that if we apply heat at some particular phase only that side of egg will boil. so that if we give heat through the water it will uniformly distributed.
