If you have ever seen, when you write with a pencil, there are a few small dust like particles of graphite left out on the paper. You also understand the a surface which seems smooth is not actually smooth and has hills and depressions in it. What I think is that,when we write (that is we are applying force and dragging the pencil tip against the paper surface), the paritcles break off and settle in the depressions of the paper.

Griaphite texture is slippery and brittle .

When we apply eraser, the eraser is soft and can be easily moulded into any shape.

So rubber particles can fit into the depressions of the paper as well and also the graphite particles can get adsorbed or stick on the surface of the eraser and are rolled off. (rubber surface is also not smooth + it can deform very easily and breaks off with graphite particles. So 2 advantages)

So maybe its this way the graphite particles are removed from the paper surface.
