This is within domain of iit. Well poisoning catalysts with sulfur and heterocycles of nitrogen like pyridine and other aza compounds would decrease their reactivity. for example u can reduce partially with metal dissolved reduction which doesnt reduce internal double bond so alkyne -> internal alkane is possible, we have rosenmund reduction, lindlar's catalyst , adams catalyst , also the less reactive hydride providers like DIBAH , etc for less reactive hydrogenation.
